Cheese cake with avocado

Ingredients for 4 small bake forms

For the base:
• 1 small package of digestive biscuits of 180 g
• 90 g butter at room temperature

For the cream Cheese cake:
• 100 g puree of avocado
• 80 g of sugar
• 1 tablespoon flour
• 1 egg and 1 egg yolk
• 1 g zest of lime
• 2 g ginger powder
• 1 pinch of salt

For the icing:
• 160 g of cream
• 20 g syrup (50 g water, 20 g sugar)
• 1 sheet of gelatin
• 1 teaspoon ginger powder

  1. Mash the biscuits in a large bowl with your hands and mix them with butter. A mass is created, which then spread it into small rounded bake forms or a larger bake pan. Spread the biscuits and put the bake forms/pan in the freezer for half an hour.
  2. In a blender, mash 2-3 ripe avocados until they become puree. Weigh 100 g for your cream.
  3. Create a bain marie, with a pot and a metal bass. There pour all the ingredients for the cream and stir well until they are homogenized. Bake your cream in the bain marie for about 15-20 minutes until it becomes a thick mass. When the cream is tight enough, remove it from the heat and allow it to cool slightly.
  4. Then the spread over the forms/pan that you put in the freezer. Return your dessert in the freezer and leave it for about an hour.
  5. Make syrup. Put the cream to boil along with the syrup and the ginger powder and soak the gelatin sheets in cold water. When the mixture is boiling, add the gelatin sheet and stir well. Allow it to cool down, but avoid turning it into a mass.
  6. Remove your dessert from the freezer, pour the icing and leave for another 30 minutes. Finally, remove it from the forms/pan it and place in the refrigerator to thaw for 15 minutes. Your dessert is ready to serve.
