Κοκτέιλ αβοκάντο με γαρίδες

Cocktail avocado with shrimp

Ingredients for 2 people:

  • 12 small shrimps
  • 2 avocados
  • 2 tablespoons mayonnaise
  • little curry
  • 1 zucchini
  • 3 petals of sun dried tomato
  • half mango
  • olive oil
  • juice of half a lemon
  • a bit of tabasco
  • salt
  • pepper
Method
  1. Boil the shrimps, let them cool, remove the shell and chop them.
  2. Cut the zucchini into small cubes and place it in boiling water for one minute. Then freeze it.
  3. Cut the mango and the sun dried tomatoes into small cubes. Mix all three together with some olive oil, season to taste.
  4. Mash the avocado and add salt, a bit of tabasco and the lemon juice.
  5. In a glass put the avocado cream and vegetables and finally the shrimp blended with mayonnaise and a bit of curry.
