Millefeuille (μιλφέιγ) Πορτοκαλιού

Ingredients for 2 people:
  • puff pastry
  • powdered sugar
  • 3 egg yolks
  • 100 g of cream
  • 100 g milk
  • juice of an orange
  • zest of an orange
  • 70 g of crystalline sugar
For the icing:
  • 30 g flour
  • 30 g of powdered pastry cream
  • 2 sheets of gelatin
  • 1 orange
  • 100 g of unsweetened whipped cream
Method
  1. Place the puff pastry between two plates, using baking paper and bake at 180 degrees. Since it is almost baked remove one plate, sprinkle the powdered sugar and put it back in the oven to lightly caramel the puff pastry sheet.
  2. In a saucepan, put the cream, milk, half the sugar, orange juice and the zest. Stir well all the ingredients together until they boil.
  3. In a basin stir the yolks, the other half of the sugar, add the flour and then the powdered pastry cream. Once the liquid ingredients boil, pour them into the basin and stir vigorously. Then place your mix back to the fire and stir for about 2 minutes, until the cream thickens well.
  4. Cool the cream in the mixer and before it is completely cooled, pour the 2 sheets of gelatin, after soaking them in cold water and dry them. When the cream cools, mix with the unsweetened whipped cream and place the mixture in the refrigerator.
  5. Garnish the millefeuille and add a few pieces of fresh orange. Make 3 layers and finally pour a little melted icing.
